I have an over abundance of Green Beans right now. But, I’m not complaining because I love them, especially fresh, straight out of the garden. One of my favorite ways to eat Green Beans is stir fried. It is a simple way to eat them without any mushiness or lack of flavor.
1 pound Fresh or frozen Green Beans (in the winter I use the frozen Green Beans I have preserved from our garden)
1/2 cup sliced onion
1 large garlic clove, minced
1/2 cup water
salt or seasoned salt
fresh ground pepper
1-2 Tablespoons butter.
In a large skillet drizzle enough olive oil to coat pan. Stir fry the onions and garlic until brown. Remove these from the pan and place in a bowl. Next add a little more oil of needed, place your green beans in the pan and add water. Cover and steam until bright green. Remove the lid add salt and pepper. Add onions and garlic back into the pan. Continue to cook until tender crisp or desired doneness. Place butter on top of beans and toss to coat.
