Parmesan Pepper Bread



This recipe can be done in a bread machine or by hand.  I usually use my bread machine set on the dough setting. Then shape it into loaves, let rise till doubled and bake.


1 1/2 cups warm water

4 teaspoons olive oil

4 cups white flour

2/3 cup grated parmesan cheese

4 teaspoons sugar

1 1/2 teaspoons salt

1/2 to 3/4 teaspoon freshly ground black peppercorns

1 3/4 teaspoons yeast


Place all ingredients in bread machine in the order listed by the manufacture.  Set to dough setting.  When done shape into loaves and place on greased cookie sheets. Cut slits across the loaf then, put in warm place and let rise until doubled.  Bake 375 degrees for 20 minutes or until golden brown on top.


If doing this recipe by hand just mix water, sugar and yeast. Let set 10 minutes to proof.  Add oil, salt, pepper, cheese and 2 cups of flour.  Mix well.  Add as much of the remaining flour as you can by stirring, then turn out onto a floured surface.  Knead in remaining flour for about 6 minutes.  Set dough in greased bowl cover and let rise for 1 hour.  Punch dough down. Shape into loaves.  Let rise again until double.  Bake 375 degrees for about 20 minutes.


Cinnamon Raisin Swirl Bread


This makes a great breakfast along with a steaming cup of coffee!


4 3/4 to 5 1/4 cups all purpose flour

1 package active dry yeast

1 1/3 cups milk

3 Tablespoons sugar

3 Tablespoons butter

1/2 teaspoon salt

2 eggs

2 cups of raisins


Combine 2 cups of the flour and the yeast. In a saucepan heat and stir milk, sugar, butter and salt till warm (about 120 degrees) and butter almost melts.  Add to flour mixture along with the eggs.  Beat with an electric mixer on low for 30 seconds, scraping bowl constantly.  Beat on high for 3 minutes.  Using a spoon stir in the raisins and as much of the remaining flour as you can.

Turn onto a lightly floured surface.  Knead in enough of the remaining flour to make a moderately stiff dough that is smooth and elastic (6 to 8 minutes).  Shape into a ball.  Place in lightly greased bowl; turn once to grease surface. Cover and let rise in warm place until doubled about 1 hour.

Punch dough down and divide in half.  Roll one half into a 12×7 rectangle.  Brush with melted butter.  Sprinkle generously with brown sugar and cinnamon. Roll up one of the short sides. Seal edge and ends.  Place seam side down in a greased loaf pan.  Repeat with remaining dough.  Let rise till doubled in size. Bake 375 degrees for 25 to 30 minutes.
