This is SO good! I love it with tortilla chips, on top of cottage cheese, wrapped in a warmed tortilla, etc., you get the picture!
2 cups of frozen home grown corn (you can use 2 cans of corn one yellow one white, drained)
2 cans of black beans, drained
2-3 fresh tomatoes, diced
Cilantro minced, use as much or as little as you like
4 green onions, finely sliced
1/3 cup of red onion, finely chopped
1 Tablespoon minced garlic
2 avocados, peeled and diced
1/4 cup lime juice
2 Tablespoons of olive oil
1 1/2 teaspoons cumin
2 teaspoons salt
Mix all ingredients together and serve or stick in refrigerator to chill.

This is one of our favorite weekend treats! It is so creamy and yummy. It goes together quickly and is a delicious alternative to regular pizza.
8oz cottage cheese
1 cup mayonnaise
1/4cup parmesan cheese
1teaspoon Italian dressing
1/2 teaspoon garlic powder
1 1/2 cup shredded mozzarella
Mix first five ingredients then stir in mozzarella cheese. Spoon into greased oven proof dish and bake at 350*F for 20-25 minutes. Prepare pizza toppings.
cooked, crumbled bacon or sausage, diced pepperoni, diced tomatoes, tomato sauce, sautéed onions and green peppers, olives, mushrooms, etc.
Spoon cheese mixture into bowls and top with favorite pizza toppings. Scoop up with breadsticks, tortilla chips or as seen above toasted bagels.
*For our family of 6 I double this recipe, but if you have a smaller family then you shouldn’t need to double it. Original recipe from Family Fun Magazine April 2005
